Reaching a Milestone

I’ve lost 50 POUNDS!!

I’d say that’s worth a post of it’s own, right?  It seems like I’ve slowly been inching towards this goal, but goodgollygosh I finally made it!  I still have 100 lbs to lose, but here I am a third of the way through and I know I’ll make it to where I want to be.  And now I finally get to spend $200 on new clothes!  Well, my reward is listed as $150 on new clothes in my Milestones and Rewards post, but I got $200 in giftcards at Christmas that I’ve been holding on to for exactly this purpose (and now I can save that other $150 for new clothes in the winter since I’ll need them!)

First off, THANK YOU to everyone who “liked” my FB milestones yesterday on my RWWF page and my personal page.  It is extremely touching to know I have so many people in my support system.  And a very special THANK YOU to my wonderful fiancee who instigated the conversations which led me to deal with the fact that I needed to make some changes in my life.  She’s been there right next to me at every victory and every disappointment.  She’s been a wonderful motivator for exercise and her squeals of delight at all my tasty dishes (and willingness to photograph many of them) have made cooking and creating healthy recipes an amazingly fun and inspiring experience.  And another special THANK YOU to my wonderful parents who have always supported me in all my endeavors and even joined Weight Watchers together this year.  In fact, they’ve lost over 60 lbs combined and my skinny-minny dad even reached his Lifetime Goal a couple weeks ago!  How amazing is that?!?!  They keep me on my toes.

This hasn’t been a smooth journey, though.  It’s taken me a little over a year and a half to get off these first 50 lbs.  I’ve fallen off track with both exercise and tracking my points, but I always got back on.  That’s the important part.  I keep getting back on plan.  Weight Watchers (as reluctant as I was to start it) is really the right plan for me.  It fits my life.  I don’t even go to the meetings or subscribe to WW Online right now, but I use a free app on my phone called WWDiary to do all of my tracking.  It’s been a lifesaver.

Okay, I’m done with the thank yous and general life blah blah blah now.  I thought it might be fun to list out 50 things that have changed in my life during this first 1/3 of the journey.  Then I’ll be able to come back and look at it whenever I lose my motivation and reaffirm why I need to get back on track again.

1. I can shop in the plus size section of regular stores like Old Navy, Target and JC Penney.
2. My back is finally healthy!
3. My “front butt” is almost gone!
4. Smiles come with one chin, not two.
5. I have more energy.
6. Bedroom antics are waaay more fun (TMI?)
7. Sleep comes more easily.
8. I can run around with our dog and not get exhausted so fast.
9. Looking at myself in the mirror is a much happier experience.
10. I fit into chairs with arms more easily.
11. My skin is clearer and brighter.
12. My knees don’t creak much anymore when I go up stairs.
13. I can stand on my feet for much longer periods of time (important for when I actually DO go to culinary school!)
14. Clothes shopping gets more and more fun.
15. I actually WANT to do things like ride a bike and walk more than 3 miles in a day.
16. I can jump and dance around like a crazy person without worrying about pulling a back muscle (keep those abs tight!)
17. I am stronger physically.
18. I am stronger mentally.
19. I feel more satisfied by the food that I choose to eat.
20. I barely ever experience an “uncomfortable” fullness after a meal because I know how to stop myself from eating too much.
21. I chew more gum.
22. I am looking forward to swimming this summer.
23. I am generally more satisfied with life.
24. I have done two 5Ks with my baybsie and plan on doing at least 48 more!
25. I feel more accomplished.
26. Long trips in cars and trains aren’t as uncomfortable.
27. I found my passion in life: cooking!
28. I’ve learned how to reward myself with non-food things.
29. I feel less stinky.
30. Parks are much more enjoyable.
31. Losing 100 pounds feels like a POSSIBLE goal.
32. I’ve made great blogger friends with wonderful, inspiring people!
33. I can keep a bar of chocolate in my fridge for more than a day.
34. Going to the gym isn’t nearly as intimidating.
35. Other people in my life have started changing theirs for the better which continues to motivate me every day.
36. I’m looking forward to wearing my wedding dress!
37. I am not nearly as worried about how our wedding pictures will turn out.
38. I can reach all the places I need to wash in the shower without extra straining!
39. General check ups at the doctor aren’t as scary.
40. I eat a lot more fruit and vegetables and I love it!
41. I pee a lot more which helps to flush out all sorts of toxins.
42. I am more sociable with people in general.
43. Sweating isn’t such an uncomfortable experience anymore.
44. My body doesn’t have random aches and pains as much.
45. Moving into our new apartment was much easier since I’m stronger overall.
46. I’m more aware of the food I put in my body.
47. I’ve discovered so many delicious and creative ways to make food fun and exciting.
48. When I hug people, I feel closer to them because I literally AM closer to them.
49. I don’t get winded going up and down the stairs at work (since only take the elevator up in the mornings)
50. Life is exponentially more beautiful and full of hope because this is the right journey for ME.

Bacon Egg and Cheese Wonton Cups and some Exciting News!

Guess who dropped 2.5 lbs this week?  ME!  Annnddddd, that means I’ve officially hit (and passed) my 10% mark!  33.2 lbs down.  If you recall, I came up with a list of milestones and rewards a while back and the reward for hitting my 10% mark was purchasing my blog domain.  DONE AND DONE!  This blog is officially housed at now!  I have always wanted a website of my own and now it’s official.  It’s been a great morning :)  Snuggles with my baybsie (who lost a pound too!), goetta breakfast bagel sandwiches, good weigh-ins and a newly purchased official blog domain!  Now, onto the foods….

How could I have not ever cooked with these before!!??!?!  These being the incredibly versatile wonton wrappers that I found in the freezer section of my local Asian food mart.  For $1.99 I got a package of 60 wonton wrappers, and after doing the math, I figured out that they are only 1 PP for two wrappers!  Awesome.  Whether you get the round ones or the square ones, they have the same PP value.

Bacon Egg and Cheese Wonton Cups
Servings: 5
PointsPlus Per Serving: 3


  • 10 wonton wrappers, 5 PP
  • 1 eggs, 2 PP
  • 3 egg whites, 1 PP
  • 3 slices cooked low-sodium bacon, chopped, 3 PP
  • 2 oz low-fat shredded cheddar cheese, 2 PP
  • salt and pepper
  • garlic, chili, tamarind powders (optional)
  • sriracha sauce (optional)

1. Preheat oven to 375.

2. If you haven’t cooked up the bacon and chopped it up yet, do this now.

3. Get out a cupcake pan and lay your wonton wrappers inside, 2 in each, forming a little cup. IMPORTANT – do not use non-stick spray. You don’t need to use ANY spray as long as the cupcake pan is non-stick. The wonton wrappers will cook perfectly and come right out.

4. Mix together all eggs and season with salt, pepper and other spices if using. Divide egg amongst wonton cups, making sure not to get any egg on the actual pan. Keep it inside the wonton wrappers (otherwise it will stick to the pan while cooking). Put chopped bacon into each egg cup and then top each cup off with shredded cheese.

5. Bake for 18-20 minutes. Take out of oven, put on a plate and top off with a little sriracha sauce if you want a little extra kick (that was my fiancee’s idea!) and enjoy!

I have a picture of the ones we made, but they are on my other computer!  Pictures of OUR delicious wonton cups will be up later.  And after searching all over the internet, it seems that this is possibly the first recipe posted of this kind on the internets!  How crazy is that?  I CLAIM THIS ONE, PEOPLE!

Cinnamon Peach Pecan Zucchini Muffins

Before I dive into any recipes, I have to say thank you.  Thank you to all of you who sent me such beautiful supportive comments after my last post.  After a hard week, it was so wonderful to read all the love on wordpress and facebook; to get private messages and texts from friends and family who wanted to let me know that they love and support me and my girlfriend.  My grandparents even sent us flowers!  It was so humbling.  So, thanks you all from the bottom of my heart.  It was exactly what I needed to jump start my tracking and exercising again!

A nice healthy glow from all the good eating and exercise.  And also from knowing how much I am loved and supported!

In fact, I earn 33 activity points this week from all the working out I did!  After my small weight loss of 3/10ths on Friday, I woke my ass up early and went to the gym before work on both Friday AND Monday, and I did 25 minutes of weights and some cardio each time.  It felt great and I don’t even mind the fact that my arms and legs are sore from it all.  I also did a MUCH better job tracking my food.  I’ve barely used any of my 33 AP or 49 Weekly Points.  And now I have a gym buddy (Sarah from the Reluctant Losers Page) and we’re going to the gym every Monday and Wednesday morning!  So, I will continue to get great exercise.  Lucky for us, one of the benefits of working for Wolfram is a SUPER discounted gym membership.  I basically pay 18 bucks a month for TWO “gold” memberships  (me and the girlfriend) at a local gym.  I have no excuses for not working out.  Period.

So, life is back on track, the weather is becoming manageable again, and cooking has been happening a lot lately!  On Saturday, I made a tasty gourmet sandwich for lunch using chicken, “zucchini linguine”, feta and tomatoes… that delicious recipe is definitely coming soon as I convinced the girlfriend to take a picture before we all dug in.  Last night I made a mexican pizza with homemade dough, refried beans, green enchilada sauce, chobani ‘gurt, corn, tomatoes, sliced up marinated beef, jalapeno, cheese and adobo spice.  It was gooooood!  Although, some guacamole or avocado would have cinched it.  Tonight, we’re finishing up our latest round of ravioli making using the ravioli recipe I posted last year (that was my girlfriend’s doing.  She loves those ravs!).  So good!  And tomorrow, I’m cooking up another batch of my Fried Rice with Prawns and Ham, although I think chicken will be replacing the ham since I no longer have any ham in the house.  That’s quite possibly our favorite leftovers meal, which is hard to come by since the girlfriend isn’t a huge fan of the leftovers.  But that’s the thing about fried rice, it always tastes better the second day!

Now… for the recipe that claimed the title of this blog!  I LOVE these muffins.  They absolutely are the best right out of the oven or warmed up in the microwave and slathered in a bit of light butter.  My girlfriend doesn’t like nuts in baked things and she really liked these ones!  I didn’t take a pictures because, really, they look almost exactly like the Lemon Walnut Zucchini ones that I posted a while back.  Just a little more “peachy” than “lemony” :)  So just trust me, they look tasty!

Cinnamon Peach Pecan Zucchini Muffins
Servings: 12
PointsPlus Per Serving: 3

Dry Ingredients

  • 1 cup all-purpose unbleached flour, 11 PP
  • 1/2 cup whole wheat flour, 5 PP
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp baking soda

Wet Ingredients

  • 1 6-oz container of peach chobani, 4 PP
  • 1/2 cup sugar, 11 PP
  • 1 1/2 cups grated zucchini (and carrot if you want), drained
  • 1 egg, 2 PP
  • 1 tbsp vanilla extract, 1 PP
  • 1/4 cup chopped pecans, 8 PP
  • 1 tsp cinnamon

1. Preheat oven to 315 degrees.

2. Grate zucchini and drain. I used my awesome food processor for quick grating and squeezed it all by hand to get out as much liquid as possible.

3. Put all the dry ingredients in one bowl and mix with a wooden spoon. Then put all the wet ingredients in another bowl and mix with the same wooden spoon. Mix the dry ingredients into the wet ingredients just until fully blended.

4. Spray your muffin pan with some Pam and scoop the batter evenly into the pan. Cook for 40-45 minutes. They should be perfectly done once the timer goes off, so take em out and enjoy! I highly recommend heating them up if they’ve cooled down before you got a chance to eat one, then slice apart and put a little bit of butter on each side. It just brings it all together!

Weekly Weigh-In and a Popchips Giveaway! CLOSED

Thumbs up for another loss!

Minus 1 pound. Yay!  I’ll totally take it.  the pattern is usually that I lose a big amount and then I gain some the following week, but not this time!  I’ve been very careful to make sure to drink lots of water, exercise and not go over my daily points for at least two days leading up to my weigh-in.  Granted, I’m also doing those things, plus tracking on a regular basis, but the water consumption especially is monitored more during those two days.  Helps to cleanse my system, ya know?

So that makes me only 1.4 lbs away from 30 lbs lost and 4 lbs away from my 10% goal!  Slow and steady wins the race, right?  A few weeks ago, I had this “moment” where I was really thinking about just how impossible it seems to get to where I want to be.  I have to lose HALF of the weight that I started with.  HALF OF MY BODY WEIGHT.  And in that moment, it felt almost impossible.  It wasn’t that I had gained weight that week and was feeling bad about it.  It was just one of those moments like when you’re sitting at work and you think to yourself that is feels like the day will NEVER END.  But, of course, it does end and you feel better when you’re back at home in your pjs.  I know I’ll get there, it just felt overwhelming for a minute. I mean, shoot, I’m almost 1/5th of the way there!  That’s waaaay better than where I was eight months ago, but I know that it’ll be more than just a couple of years before I reach my goal.  Probably more like 4.  But I’m okay with that.  Every day I get closer and every day I feel better.

So!  Enough with that.  Now for something fun!  Recently I tweeted to Popchips about how I was interested in a “taste and tell” about their product and whaddaya know… they sent me samples!  Actually, they sent me TWO sampler boxes, both with invites to “pop it forward” so that my lucky readers could share in the poppin!

I have to say, I’m a fan of the Popchips!!  Each serving is only 3 PP, although it’s a good idea to count them out (you get 20 chips per serving compared to the average 10-13 you get for another chip) because you’ll just keep on eating them.  My favorites were Salt and Vinegar (of course.  i’m obsessed with that flavor), Barbeque and surprisingly, Salt and Pepper!  I wasn’t sure how I’d feel about Salt and Pepper, but I was pleasantly surprised!  And for those of you that are watching your sodium, the flavors with the lowest sodium content is actually Salt and Vinegar and Barbeque with only 210mg of sodium per serving.  The others were like 240mg and 260mg.  You’d think that SALT and Vinegar would contain more sodium…. I’m glad to see that it’s not the case!  I definitely recommend these for anyone who’s trying to eat healthier but doesn’t want to give up their chips.  Not the same texture as a potato chip, but the flavor is still the same.  The texture is more like… cereal puffs, only shaped like a larger circle rather than a small ball.

Weekly Weigh-In and a Smoothie Recipe

This is Immi doing a happy dance for my good weigh-in. Or maybe it was an escape attempt….

After three weigh-ins of gains and not enough time spent at home cooking, I finally made up for it and lost 5.4 lbs this week! But really, it’s just 2 lbs less than what I weighed in at before I gained those 3.4 lbs back. So yay for redeeming myself!

They were pretty, delicious AND WWF. Better than a cake!

A list of random things before I give you the yummy smoothie recipe….
– I turned 27 this past Sunday. Happy birthday to me!
– My girlfriend is awesome. She bought me a bouquet of chocolate covered strawberries for my birthday rather than a cake! Sweet AND WWF :)

And now, for your yummy smoothie recipe!  This is another recipe that I created using Chobani ‘gurt.  It was quick, easy and delightful.  You can switch up any of the ingredients to make it your own.  I’m not a HUGE fan of bananas and berries in the same shake, but it’s what I had on hand.  I’d much rather pair bananas with peanut butter or coconut and some chocolate syrup… and let the berries do their own thing with either lemons, vanilla gurt or ice cream, or…. chocolate syrup.  Yep.  Chocolate syrup is pretty much my “go-to” in many dessert situations.  But not too much!

Berry Banana ‘Gurt Smoothie…  Made with Chobani Pineapple ‘Gurt.

Berry Banana ‘Gurt Smoothie
Servings: 1
PointsPlus Per Serving: 5


  • 1 6-oz container of Chobani Pineapple, 4 PP
  • 1/2 cup blueberries
  • 1 cup mixed frozen strawberries/raspberries (or fresh if you have them)
  • 1 cup frozen banana rounds (slice up bananas when they are just starting to brown and then freeze them!)
  • 1/3 cup low-fat milk or Silk Coconut Milk, 1 PP
  • 1 packet sweetener like splenda or truvia

1. Add all ingredients to blender. Blend. Pour. Enjoy. The end.

Since the bananas were frozen, there’s no need for ice! But if you don’t have any of your fruit frozen, then you’d want to add about 4 ice cubes or so. One more picture for the road!!

Reluctant Losers Contest Winner Is….

So, in case you didn’t know, I lead this group of awesome women called the Reluctant Losers.  Every week they respond to an email with their weigh-in and/or measurements.  I update their profiles on the Official Page and then post stats for what we lost combined for both that week and all together.

Lucky Number 3!

Stepping on a scale is not always fun.  If you’ve had a bad day, or haven’t been tracking very well, or you feel bloated… weighing yourself is the LAST thing you want to do.  But these women keep themselves accountable and step on almost every week.  In order to entice more accountability, I decided to do a little giveaway.  Everyone that sent their weekly weigh-in to me by last night at midnight was entered into a drawing for a $10 Amazon giftcard.

So, this morning, I checked my email for midnight weigh-ins, typed out the names of those that replied to me in the order I recieved them, plugged the numbers into Random.Org and…. the winner of the contest is SARAH!!  Congratulations to her for both a great weigh-in and for being the lucky winner!

The money for this contest was donated funds.  I promised to post how each dollar is spent, so here’s the first amount spent!  I told the Reluctant Losers that I’d do this randomly again in the future, but I wouldn’t tell them when it would happen, the winner will be selected from the group of people that send in their weigh-ins by the following Monday at Midnight!  I’d step on a scale for that!

Sorry for the lack of recipe posts lately.  I’ve been busy cooking and celebrating my girlfriend’s birthday!  I made all that chicken plus more like I talked about in the last post on Saturday.  I also made a non-WWF yellow cake with chocolate frosting and lime green sprinkles around the edge since that’s what the birthday girl requested!  (the sprinkles were my own touch)  And then we headed over to the local Korean Karaoke Restaurant to sit in a hot room for two hours drinking beer and singing Journey and boozy power ballads.  It was awesome.  I even busted out a special rendition of “Think Twice” by the power ballad queen herself – Celine Dion.  Pure insanity.

On Sunday we decided to do NOTHING… until my girlfriend got antsy from doing nothing, lol.  So, we headed over to Target, bought her a softball glove, grilled some steaks (she grilled, I made green beans.  It was so good!) played some catch, and went to the softball game that was scheduled for that night.  WE ROCKED.  We still lost, but considering the fact that we are last place in the league with NO wins and we were playing against an undefeated team and we held them off for the entire allotted time (when we’ve usually stopped after 5 innings or so because we’re so far behind), we really DID rock!  I played catcher for the first time ever.  Loved it!  Although my thighs have been screaming at me for two days now because of all that squatting!  I’m just so grateful to feel healthy and strong enough physically to not only play softball, but to play a position where I was was squatting and using my back a lot more than I’m used to.  My back is holding up SO MUCH BETTER these days.  (thanks, Mr. Naturapathic Chiropractor!)  Anyway, we ended the game 14-Them, 1-Us.  We sure felt like winners!  It was the best game we’ve ever played!  Caught all the fly balls way into the outfield, got outs at first and second, pitching was great.  Yeah.  Great Sunday night.

But the best day was yesterday, her actual birthday.  Roses and brownies were waiting for her when she got back from her morning meetings, lunch was on me at one of our local Asian restaurants (amazing.) and then her lovely colleagues gave her the first clue for the scavenger hunt I set up right before she was supposed to leave work.  That first clue led her to Urban Outfitters where she found a giftcard and another clue… which led her to her favorite local bakery/cafe for a slice of cake and another clue… which led her to our local running store for another giftcard and the last clue… which led her back home for a special dinner!

I made roasted rack of lamb, parmesan crusted asparagus and mashed potatoes.  A bottle of red wine and a movie topped off the night and we just relaxed in our PJs.  It was worth all the effort and extra work to see the misty look in her eyes as she walked in the door and the food was AMAZING!  I’ve never made lamb before (it’s not exactly WWF), but I’m planning on trying some other recipes when I can find a good deal on lamb meat!  So… we ate like royalty for three days, didn’t exercise much other than sweating our butts off cleaning before people came over on Saturday (this is what happens when you have friends that are allergic to cats), sweating again during softball and sweating during karaoke!

This morning we took a 3 mile walk and ate salads for lunch.  Normalcy has returned, but those three days were certainly worth it :)  And I promise to post some tasty recipes soon!

Two Weekly Weigh-Ins and More!

I didn’t have a chance to put up a weigh-in post from last week, so the above picture shows what the results were – stayed the same.  No loss, but no gain.  I hadn’t been tracking my points very well, so I’m pretty sure that was the cause.  I’ve been keeping up with my exercise, but lately I’ve been ravenously hungry!  It’s all this exercising!  So, now my challenge is remembering to bring in healthy snacks to work so I’m not left lunging towards the free bottles of Starbucks Frappaccinos at work.

It’s hard work staying on track.  I can’t tell you how many nights I’ve looked at my point balance and said “Oh, an extra 4 points won’t matter.  I’m hungry!”  This week, I tried eating more salads (strawberries, feta cheese and sliced almonds.  YUM!), changed up my exercise routines to include some pilates and yoga instead of walking each time and I lost 2.5 pounds!

I’m so close to my 10% loss! I’ll be purchasing my blog domain soon :) VERY EXCITING!  25.9 lbs all together so far and it feels great.

Some other exciting things are happening too.  Remember how I gave in to Twitter Fever?  Well, one of the advantages is being able to have direct contact with different people AND companies.  In the past couple months I’d tried multiple times to win a free case of Chobani Greek Yogurt from different people who had been chosen by Chobani to be their bloggers of the week.  I never won.  So I posted a tweet telling them if they made me their blogger of the week that I’d go crazy with recipes!  And they responded :)  So, the week of July 13th, I’ll officially be Chobani’s Featured Blogger of the Week!!  They’ll be sending me a free case of their yogurt to go nuts over and I’ll get to give away a free case to one lucky reader!

I plan on making a few different things with the ‘gurt.  Popsicles are definitely in my future.  So are parfaits, a bread or cake of some kind, and something a little savory too.  I bought a pineapple one from Meijer the other day and it was heaven in my mouth.  Very satisfying!  I’m so excited to be able to try all sorts of new recipes, but especially to be able to give away a free case of the stuff!  WOOT WOOT!!

There’s also another giveaway coming this summer, but the details are being worked out right now.  Let’s just say… if you aren’t vegetarian, then you’ll be excited about this one!  Speaking of non-vegetarian activities, I’ll be doing more grilling this weekend!  We’re having a little party at our place this weekend since my beautiful girlfriend is turning 25!  Chicken and burgers are on the menu.  Saucy Italian Chicken and special BBQ burgers, to be exact.  I’ve made these special BBQ burgers twice now and each time they’ve been AMAZING.  Recipe will be coming soon!  After the party, we’re doing karaoke korean-style at a local place.  80s and 90s power ballads will be sung after drinks have been served and I’m guessing we’ll be sleeping off boozy love songs on Sunday!  Have I mentioned how much I’m loving this summer?

Weekly Weigh-In and a Fun Twist on Breakfast

Minus 1.4 lbs!  Another good weigh-in.  That means I’m less than 10 lbs away from my 10% goal!!  Quite exciting stuff, people.

I don’t know what happened to me when I got back from our Chicago trip, but all of a sudden, I was in a cooking frenzy.  I made all sorts of dishes (some of which I’ve posted already), dragged my girlfriend into taking all the pretty pictures and got down to business!  I even made a batch of tasty muffins using the Banana-Applesauce Bread recipe and kept them nice and moist with a little less cooking and a handful of berries!

I wouldn’t have been able to make those muffins if I hadn’t remembered to grab a muffin pan from Meijer on my last trip.  I ran across this fun recipe from the Point-less Meals blog.  It looked fun and easy and I REALLY wanted to make it, but I had no muffin pan!  So, I bought one and made use of it right away!

My version uses Canadian Bacon and American cheese, but I’m sure you could do a variety of combinations.  I think next time I’ll try using some of our sun-dried tomato and basil Laughing Cow cheese wedges instead!  You could use turkey or chicken lunch meat, or really any sliced meat you wouldn’t mind eating with an egg.  And any kind of cheese is welcome, as usual :)

I dub this dish the “Breakfast Tulip”

Bacon ‘n Egg Cups (adapted from the Point-less Meals blog)
Servings: 2
PointsPlus Per Serving: 4


  • 4 slices Canadian Bacon, 2 PP
  • 2 eggs, 4 PP
  • 2 slices 2% American cheese singles, 2 PP
  • salt and pepper

1. Preheat oven to 375. Spray two sections of muffin tin with Pam.

2. Place 2 slices Canadian bacon into each section forming a makeshift cup. Crack egg, one at a time, into bacon cups. Take each cheese slice and fold it until you can break it into two cubes a piece. Place in egg. Salt and pepper the top just a little.

3. Put into oven and bake 17 minutes for softer baked eggs, or 20 minutes for more firm eggs. Serve immediately and enjoy!

Weekly Weigh-In

Woot Woot! Crazy face.

minus 3.6 lbs!! Whoa. Wasn’t expecting that! I’m sure it has more to do with my water retention being lower this week (Aunt Flo’s packing up to leave) whereas it was much higher last week. But hey, I’ll take it! It brings my total weight lost so far to 23.8 lbs!

I have a few random things to mention in this post.  I’ve been so busy posting delicious recipes that I haven’t been able to update you all on some new thingamajiggs!

In case you haven’t noticed on the page, I gave in to Twitter Fever.  I had to see what all the fuss was about.  Basically, if the best part of your Facebook experience is looking at people’s statuses, then you’ll love twitter.  It’s status updates ALL THE TIME.  I have to admit… I kinda like it ;)  So, if you have Twitter and you feel like following my crazy updates and this blog, follow @ReluctantFoodie!

My awesome group of Reluctant Losers has been working so hard!  If you haven’t checked it out, you definitely should.  In 14 weeks, we’ve lost a total of 166.8 lbs!!  How incredible is that?!?!  We’ve reached all sorts of goals that we set for ourselves and rewarded ourselves too.  Check out the Stats Page to see all of those goals and rewards.  I thank God for all these women who inspire me and keep me accountable each week!  I doubt I would have stuck to this healthy routine if I didn’t have to post a weigh-in each week.

Another random tidbit… I’ve reached over 10,000 post views!!  WHOA!  Part of that success is owed to my lovely girlfriend (her business is called Beautiful Orange Productions) who took a most fantastic photo of the banana bread I made a couple weeks ago.  I submitted the photo to Foodgawker and it was ACCEPTED!  That next day, I had 700 post views.  almost 500 of them were from Foodgawker.  I’ve submitted 20 photos to that site, many of which I thought were wonderful photos, but they were always declined for whatever reason.  It is VERY hard to get published on there.  Basic point-and-shoot skills don’t cut it.  So, I was very proud of us for that accomplishment!

Skinny Fried Perch and a Weekly Weigh-In

Plus 1.1 lbs. I can deal. You know what’s interesting? Last week, I weighed myself on Friday because I missed it on Thursday. I was shocked that I lost weight. So, when I weighed myself on Thursday and saw a small gain, I wasn’t surprised…. but then I weighed myself the next day (after a long walk, 2 glasses of water and a big bowl of cereal) and I weighed two pounds less than the morning before! Hot damn. Bodies are weird. I guess that’s why they say to be consistent with your weigh-ins. My weight fluctuates from day to day, but day-of-the-week to day-of-the-week seems to be pretty consistent. Anyone else notice this?

Anyway…. I finally bought my two new cookbooks! They were my reward for losing 20 lbs and I happened to find two AWESOME ones at Sam’s Club! The first is the Hungry Girl 300 under 300 cookbook. It has some awesome recipes that I’m excited to try out! The other one was the beautifully illustrated Cooking Light 500 Best Recipes. I have to say, Cooking Light has some really great stuff. They always have fantastic, mouthwatering pictures, and they have all the nutrition facts listed for each recipe. Gotta love that! I’m excited to share some of those recipes with you.

When my parents came up for the 5K, they brought with them a whole bunch of frozen fish from my Aunt Jodi who was cleaning out her fridge (since she was packing for her recent move to Maryland). She brought salmon, mahi mahi and perch! We usually don’t eat a lot of flaky fish because of our own taste preferences, but who turns down free food?? I was happy to pack it into my freezer (thanks, Aunt Jodi!) So what do you do when half your freezer is packed with frozen fishies? You thaw some out and cook em. Duh.

I took some of that perch, breaded it with cornmeal and spices and skinny-fried it (which means I baked it)! It was quick, easy, and quite tasty. I didn’t have any pickle relish in the house to make tartar sauce with, but I did mix together some light Hidden Valley Ranch, a little light sour cream and some Adobo spice to make a yummy dipping sauce.

Skinny Fried Perch
Servings: 2

  • 12 oz raw perch (I used six 2oz fillets), 7 PP
  • 1/4 cup yellow cornmeal, 3 PP
  • 1 tbsp parsley, finely chopped (or 1 tsp dried)
  • 1/2 tsp cajun spice
  • salt and pepper
  • 1 egg (no PP since you end up discarding most of it)
  • 1/2 tsp lemon juice

1. Heat oven to 400 degrees.

2. Take a piece of wax paper and mix together your cornmeal, parsley, cajun spice, salt and pepper on it. Crack the egg into a bowl and whisk in the lemon juice. Then pull out one baking sheet and coat with canola spray.

3. Make sure your perch is all thawed out (if not, run it under cold water for about 5-7 minutes) and then pat each piece dry with a paper towel. Dip one fillet at a time into the egg and then place onto cornmeal mixture. Pat down for cornmeal to mix and then flip and do the same to the other side. Use a spoon or your fingers to make sure the sides are coated too. Then place onto baking sheet.

4. Once all fish are breaded, lightly coat fish with canola spray and stick pan into oven for 10 minutes. Fish should be perfectly cooked at this point. If you want it just a little bit crispier, leave in for another two minutes (just be careful not to dry it out!). Serve immediately.

Perch is just one fish. You can also try flounder, mahi mahi, catfish, or another white fish. Try mixing up the spices that you put in the cornmeal too. This was my first attempt, so I kept it pretty simple. If you come up with some awesome ideas, please leave a comment! I’ll be sure to try out some other combinations when I make this again.
